This is a little bit of a veggie yardsale, but thats ok, veggies are good for us! Tofu is a surprising blank canvas, and with a little seasoning can pretty much be transformed into just about anything. Although I wouldn’t say it tastes like chicken, it did place a nice addition in texture to this vegan style sandwich.
Another delicious flavor in this sandwich comes from Jicama. Jicama is a root vegetable with a taste and texture somewhere in between a turnip and an apple. Can be eaten raw or cooked, simply peel to enjoy. A good source of fiber, vitamin C and potassium.
Whole grain sliced bread, the nuttier the better!
Orange Bell pepper
Sea salt, Tumeric, mixed herbs
1. Slice tofu, season and pan sear on med/ high till golden on both sides
2. Slice bell pepper, onion, and avocado
3. Chop jicama
4. Toast bread, spread pesto on one side, avocado on the other
5. Assemble sandwich as you like
