Pulling open the refrigerator door, I am immediately welcomed with an abundance of fresh delicious veggies just waiting to be turned into something magical. This veggie rich spinach salad with savory lemon caper vinaigrette is the magic your dinner table has been waiting for.
Selecting a choice amount of salad fixings, I strew them about on the kitchen island. Something green, something red, something purple and yellow.. beautiful!
Chop, slice, dump and pour, shake, toss and sprinkle! Bam. Spinach salad perfection.
Serve it up as a side dish, or add grilled chicken and fresh avocado slices for a fulfilling main dish.
A fresh crunchy veggie salad with whole cashews, tossed in a savory warm lemon caper vinaigrette.
Ingredients
- 4 cups fresh spinach
- 1 whole red bell pepper, sliced nice
- 2 cups red cabbage, chopped or shredded
- 1 cup rawcashews
- 3 tablespoons capers
- 1 cup avocado oil
- 1 tbsp vegan butter
- 1 fresh squeezed lemon
- Sea salt
Instructions
- Throw spinach, cabbage, bell peppers and cashews in a large salad bowl
- Warm avo oil and vegan butter to melt (about 30 sec in the micro or a few min on the stove)
- Add capers and lemon juice to complete the vinaigrette
- Toss salad with vinaigrette and sprinkle with Sea Salt
