Forbidden black rice is an outstanding complement to any meal. It holds the highest amount of antioxidants than any other rice variety….. plus its tasty. Oh, and its vegan. I’m doing so good with this challenge.
1 cup black rice
2 tbsp avocado oil (or coconut oil)
1.5 cups water
1 Tbsp Cumin
1 Tbsp Sea Salt
1 Tbsp dried minced onion
INSTRUCTIONS
Heat oil in a med saute pan over med heat
Add rice, stirring occasionally to toast (2-3 min)
Add seasoning and water
Cover, reduce heat to med/low and allow to simmer for about 40 min
Fluff with a fork and add more seasoning if desired
NOTES
For a touch of heat, add 1 Tbsp crushed red pepper
