Crunchy Quick Pickle Recipe for any Veggie

This super simple crunchy quick pickle recipe will work with any veggie you would like to pickle.   I love it with golden beets, red onions, and spiraled cucumbers.  It also makes a delicious crunchy quick pickled carrots and jalapeños.  But a jar of purple cabbage is pretty perfect too!  We’ve had lots of fun creating tons of different combinations, and this recipe is by far my favorite recipe to pickle anything.

What makes this pickled recipe so good? Crunchiness. We use fresh raw veggies, and allow them so soak up the pickle brine for just a short period of time. This gives them all the delicious flavor of a pickled veggie, but allows them to hold onto their crisp crunchy texture.  Which, is the best part!

Crunchy Quick Pickle Veggie Combinations to try!

Rainbow Carrots, Jalapenos

Purple Cabbage, White Onions

Red Onions, Green Beans

Spiraled Cucumbers

Golden Beets, Red Beets

Red Bell Peppers, Poblano Peppers

Crunchy quick pickle carrots and jalapeños

Crunchy Quick Pickle Veggies

(Makes Enough liquid for about 2 32oz mason jars)

Ingredients

  • 4 cups chopped or spiraled veggies 
  • 4 teaspoons raw sugar
  • 4 teaspoons sea salt 
  • 2 cups very warm water
  • 1 cup Apple cider vinegar 

Instructions 

1. Fill jar (s) with chopped or spiraled veggies of your choice

2. Dissolve 4 teaspoons raw sugar, and 4 teaspoons sea salt in 2 cups very warm water 

3. Stir in 1 cup Apple cider vinegar

4. Pour mixture over veggies

5. Screw on top and refrigerate for at least 1 hour

Somewhere down a winding road. Off to the right, Somewhere down a winding road.  Off to the right, then the left, the forest opens up to a dreary wet sky. They are easy to do, just 2.5 tablespoons of sprouting seeds, rinse twice a day and in 4-6 days you e got a big jar of fresh greens!
