Whole tomatoes, onion, and raw peppers are charred over the heat of an open flame. They are tossed with a squeeze of citrus, cilantro, and a healthy amount of fresh cut garlic until……Bam! Salsa. Amazzzzzing Salsa. Chargrilled Tomato Salsa. By far the best salsa I’ve ever made. So good in fact, I may never make salsa any other way again. Except maybe this way, which is fantastic too, but in a different way.
Grilling the Tomato just brings us to whole other level of salsa. The kind of salsa that makes you want to lick your fingers, and the bowl. Which you totally can, no judgement whatsoever. The heat seems to trap the garlic and citrus so perfectly, that you’d think they had been marinating together for much more than a few seconds. (Or however long you are able to wait before eating it).
I used this pretty yellow and orange stripy pepper. It appears to be a fairly new creation, that is suppose to be fun for kids with its bright colors. I did not notice a taste difference in this stripy pell pepper, so any red, orange, or yellow bell pepper will work just as well in its place.
