Cinnamon swirl bread pairs perfectly with fresh blueberries, and warm caramelized vegan banana butter. This “butter” is completely vegan, as it is made solely of melted banana.
Soaked in sweetened cinnamon, that loaf of bread is the source of the cinnamon aroma that’s been filling the van these last couple days.
Traveling our cinnamon scented van a little further south on the California coast, we took up an offer from a previous neighboring camper, to explore some rural property in the hills above Malibu.
We wake up to subtle beams of sun peaking through the edges of our homemade window shades, the van door opened to the sound of nothing. A peaceful stillness you only find hidden in nature, far away from sounds of schedules, plans, and the business of civilization.
Cliffs of mountain rocks sit behind us, a view of the ocean is just off in the distance, a few scarce pine trees surround the perimeter of the leveled peak we are parked on. The pup, contently lying in the morning sun, stares off towards the canyon.
The ground crunches beneath my feet, as I step over to the edge, and look out towards this morning. A morning filled of mountain, canyons, trees, dirt, sunshine, and ocean. Much to explore, but so nice to just be still.
A warm breeze rustles the tree. It’ll be hot here in a few hours, but the ocean will be cool, and we’ll move back towards it in a little while.
But first, the breakfast. Simple and hot, is all that’s needed for a breakfast. That, and preferably, little to no dishes.
Cinnamon swirl toast with vegan banana “butter” and blueberries, is a perfect hot breakfast for camping.
It is a warm and simply satisfying breakfast that can be prepared quickly, with little clean up. Using our single Alpha butane burner and 8″ fry pan, this breakfast comes together is under 10 min.
The clean up is quick, using just a single paper towel, and splash of water.
For the clean up:
Splash water in the pan, and swirl and toss.
Remove any remaining remnants by wiping the pan with a paper towel.
