Simple vegetarian lunch that is easy to prepare beachside or at your campsite. Especially if you’ve got one in these little table top propane grills on hand. We use this thing for everything.
I’m not typically a fan of store bought tortillas, but recently discovered these green chile tortillas below, and they are fantastic! My sister n law made enchiladas with them, and they were super tasty and held their shape really well. A blend of corn and wheat makes them soft and playable, similar to a corn tortilla in consistency, but very forgiving without any breaking.
La Tortilla Factory green chile corn & wheat blend tortillas
- Top tortillas with black beans and cheese
- Cover and heat on the grill until lightly crisped, 2-3 min
- Top with cilantro
Optional; drizzle with hot sauce or top with Heirloom Tomato Salsa
