Vanlife Log: Park City Tacos
Vanlife Log, day 19. Leaving the warm open lands of western Colorado, we moved toward more snow covered terrain. The sun had set, and baby was ready to be free of her car seat. It was time to refuel and make a few travel decisions. We made a pit stop for some Park City tacos.

They have one insane salsa bar of about 10 different salsas. The majority of them are high on the spice level, but all are worth a taste.
We sipped beer in the van, and then walked over to El Chubasco. The lines as considerable, but it moved quickly. Chips were fresh and crisp, and the salsa bar even had a “Bebe” salsa (not spicy) for our little one to try.
We were nearly 800 miles from MT Hood, OR. We planned to end up in Oregon eventually, but were adventuring through a new scenic route, coming from Colorado instead of California.
Jackson, WY was about 300 miles from us, and not exactly on the way to Oregon. However, neither of us had been to Jackson. Exploring something new would be the adventure route.
As it usually does in most decisions we make, adventure won. We headed to Jackson.
